Crack Wings

These are the most addicting wings Ive ever had— its as if “fish sauce wings” AND “salt & vinegar wings” had a baby! The flavors are bold, bright, and tangy. The sweetness from the honey balances out all the umami—its amazing, I bet you can’t just have one. Save some sauce for extra dipping; this dip recipe can be used as a salad dressing, a steak sauce, or even drizzled over seafood! If you try this recipe, i’m sure you will love them. What you’ll need:

Servings: 6-8

  • 4 lbs chicken wings

  • 2 tsp onion powder

  • 2 tsp turmeric

  • 2 tsp baking powder

  • salt

  • black pepper

  • 1/2 cup fish sauce

  • 1/2 white vinegar

  • 2 tsps honey

  • green onions

  • fresh cilantro

  • thai chili peppers

  • 2-4 garllic cloves

Instructions:

*Make sure all produce/veggies are washed and dried

  1. Place chicken wings in a mixing bowl and season with onion powder, turmeric, baking powder, salt, and black pepper— be careful with salt here because sauce will be salty enough. Mix well and set aside.

  2. Prep herbs— use as much or as little based on your preference

    * finely chop cilantro with stems on

    *thinly slice green onions and discard the white ends

    *thinly slice thai chili peppers

    *finely mince garlic if not using a garlic press

  3. Airfry wings in one even single layer at 400F for about 20 minutes— make sure to flip wings halfway through cook time.

    *You can also bake wings in a preheated oven at 375F for about 45-60 minutes— flip halfway through cook time.

  4. As chicken is cooking prep sauce— In a bowl, combine fish sauce, white vinegar, honey, pressed garlic, chopped cilantro, chopped green onions, and chopped thai chilis. Mix well and set aside.

  5. Once chicken is cooked, transfer to a serving dish and using a basting brush, generously brush the tops of the chicken making sure to scoop up the chopped herbs/chilis/garlic. Serve the rest of the sauce on the side for dipping.
