Chicken Lettuce Wraps w/ Peanut Sauce

This is one the recipes where I really mean don’t knock it until you’ve tried it. Fish sauce is a staple in Southeast Asian cooking. The flavor is unique and one of a kind; all you need is a little bit to transform even the most boring dishes into a bright and umami style dish. This chicken recipe is the perfect amount of sweet and savory. The crisp from the fresh romaine and the nuttiness from the peanut sauce will send your tastebuds into a different universe!

What you’ll need:

Servings 3-5

  • 2-3 large chicken breats

  • 1 T fish sauce

  • 1 tsp sesame oil

  • 1 T Monkfruit sweetener or sugar

  • black pepper to taste

  • 2-4 stalks green onions

  • 4-6 garlic cloves

  • 1 small shallot

  • 1 T peanut butter

  • 1 T soy sauce

  • 1 T sriracha

  • 2-4 T hot water

  • Romaine lettuce

Instructions:

  1. Start by rinsing and drying romaine lettuce (separate leaves) and green onions

  2. Chop green onions, garlic, and shallot into small pieces and set aside

  3. Rinse and dry chicken breast and cut into long slices . Place in a mixing bowl.

  4. To chicken mixing bowl, season with fish sauce, sweetener, sesame oil, and black pepper , set aside

  5. To a medium-hot skillet add green onions ( save a little for garnish later), garlic cloves, and shallot. Stir fry for a minute until fragrant

  6. Add seasoned chicken in and stir fry for until chicken is cooked though (internal temp reaches 165F).

  7. Transfer chicken onto serving dish and garnish with fresh green onions. Let cool while you prepare peanut sauce

  8. For the peanut sauce, combine peanut butter, soy sauce, and sriracha. Slowly add in small teaspoons at time of boiling hot water and keep stirring until sauce is to desired consistency.

  9. Serve chicken on romaine lettuce leaves and top with peanut sauce, enjoy !
